Seidelberg De Leuwen Jagt Muscadel NV (0,375L)
A delicious sweetie. Muscat de Frontignan grapes are used to make this gorgeous, decadent, dessert wine. Cinnamon and raisin flavours abound in this classic SA favourite. It has a powerful aroma of Muscat and raisins. Fortified with Brandy. Simply delicious!

GRAPE VARIETIES :
White cultivars are Chardonnay, Sauvignon Blanc, Chenin Blanc and Viognier.
Seidelberg is planted at a ratio of 80 percent red and 20 percent white grape varieties.
The red varieties are Cabernet Sauvignon, Shiraz, Merlot, Cabernet Franc, Pinotage, Malbec and Mouverdre.
We also have a small amount of Muscat de Frontignan, which is used in our dessert wine.

HARVEST :We harvest by hand in baskets and use sorting tables to remove any bunches which do not meet our stringent quality standards. Only the best, most carefully tended and selected grapes are used in the making of Seidelberg wine.

CELLAR: The grapes are transported to the de-stalker in baskets or small wooden bins in order to keep them in the best possible condition. On arrival at the cellar, the grapes are weighed, then sorted before passing through the crusher and into the cellar.

WINE MAKING: Our winemaking team begin the painstaking process of turning high quality fruit into premium wines, each with the individual character which typifies Seidelberg wines.
EVOLUTION : Using a tried and tested mixture of centuries old tradition combined with modern technology, they carefully nurture each batch of grapes through every stage of their evolution all the way to the bottle.

YEAST: Each wine is inoculated with a specific yeast to bring out the best in that particular cultivar.
THE WINE: Many of our red wines are still fermented in the old way, in an open fermenter, because we know that it will bring out the best in them. Oak barrels from a wide variety of cooperages are used as a subtle compliment to the rich, complex flavours of the wines.

Peach and pineapple aromas flow through to the palate, with fragrant honey flavours. The wine has crisp acidity, balancing with the aromatic sweetness and providing a clean, yet full finish. This is the third vintage of this wine that we have produced and I feel that it benefits greatly from some time in the bottle.

Laibach Natural Sweet Chenin Blanc 2010 (0,375L)
This wine is very special, not only for Laibach, but also for the whole of the South African wine industry. It is the only sweet natural wine made in this style from 100% Chenin Blanc grapes. The idea started about 4 years ago when, before harvest, we tasted a few sweet wines from the Northern Hemisphere. It was remarkable how these wines were so well balanced with moderate alcohol and yet great sugar to acid ratios. Completely different to any sweet wine of South Africa. The 2005 vintage for white wines was not easy. At one stage, after heavy rainfalls in January, we did not expect to get quality high sugar grapes. The grapes for this wine came from a single vineyard block about 20 years old. Not very vigorous, it produced perfect little super-ripe berries with no botrytis. The grapes were picked in the early morning, de-stemmed, crushed and very gently pressed. Fermentation lasted about 4 – 5 days and as soon as the “sweet spot” (perfect balance between alcohol, sugar and acid) was reached it was stopped. The wine was bottled in April. It has a lovely bouquet of concentrated white peach, sweet winter melon and pineapple flavours. The nose is really showy, complex and you can almost smell the balance in the wine. Juicy fruit salad on the palette with wonderful acid-sugar ratio. The wine is best enjoyed very cold, can be served with starters, but will also complement lovely fresh dessert dishes. Nobody will ever know how it will age, because it usually doesn’t last too long in the cellar! Allesverloren Fine Old Vintage 2008
Allesverloren Port is produced from predominantly Tinta Barocca, Souzao, Pontac and a blend of Malvasia Rey, Tinta Röritz, Tinta Francisca and Touriga Naçional, varieties planted at an altitude of 140 metres above sea level. The trellised vineyards face in a north-south direction and are about 43 years old. The wine is woody and toasty on the nose with nutty and raisin berry undertones. On the palate it is a creamy, soft and multi-dimensional port with full ripe fruits and a lingering aftertaste.

Attractive deep yellow gold colour. Great intensity and sweetness. Dried apricot, nuts, honey and burnt treacle. The palate is intensely sweet yet not cloying, fresh and lively yet richly oxidative with a long clean and complex finish. This vintage is best as a sweet treat on its own after a fine meal (or upgrade an ordinary meal!). A rewarding challenge to match with desserts!


The grapes were picked at optimum ripeness and laid out on drying racks in 70% shade for 3 weeks. This allows the grapes to concentrate sugars, acids and flavours, before reharvesting in the cool mornings. Fermented with natural yeasts and matured for 22 months using mostly new 225L French oak barrels. Racked while in barrel to remove heavy sediment and lightly bentonite fined.

Klein Constantia Vin de Constance 2005 (0,5l)
Description: Richly viscous in the glass, with a burnt orange-gold hue, this wine exhibits youthfully fresh, floral muscat aromas, and exotically spicy confectionary flavours on the unctuously textured palate. These rich flavours are well balanced by brisk acidity, and an attractive bitter orange twist on the clean, persistent finish.

Wine Record Grapes were left to raisin on the vines, and were hand-selected towards the middle of March of this warm vintage. Fermentation of the sticky, concentrated must took place in temperature-controlled stainless steel tanks, followed by 18 months of maturation in French oak. The wine was released almost 5 years after harvest.

Maturation Drink now or cellar long-term.
The wine is bottled in asymmetrical 500 ml bottles, which are a reproduction of the hand-blown originals. Each is presented in a box, with a brochure containing the history of Constantia wine.
