A refreshingly crisp Rosé with hints of berries and strawberries.
This Rosé is made using the injection of carbon dioxide bubbles. It is a blend of 65% Chenin Blanc, 26% Muscat and 9% Ruby Cabernet. The grapes were sourced from trellised vineyards and bush vines, then picked fully ripe at 24° - 25° during balling. The grapes were cold soaked at 12°C - 15°C for 48 hours to extract maximum flavour and create softer tannins. Only the free running juice was pumped over and allowed to settle under reductive conditions. The juice was cooled to -4°C and kept at that temperature for two weeks until all excess water in the juice was frozen – a practice which increases the flavour concentration and sugar level. The juice was then pumped from the cold tanks and the temperature increased to 8°C – 10°C after which it was inoculated with selected yeast strains. After fermentation the wine was filtered before bottling.

Full, fruity nose, with whiffs of pineapple, peach and apple ending with a soft, dry finish.
This wine is made using the injection of carbon dioxide bubbles and consists of 57% Chenin Blanc and 43% Muscat. After crushing the juice was pumped to an enclosed press where it was kept on the skins for 24 hours to allow for optimal flavour extraction. Only the free-run juice was then pumped over and allowed to settle under reductive conditions. The juice was cooled to -4ºC and kept at that temperature for two to three weeks when all excess water in the juice was frozen, a practice which increases the flavour concentration and the sugar level. The juice was then pumped out of the cold tanks and the temperature allowed to rise to 8ºC to 10ºC after which it was inoculated with natural yeast strains. Fermentation took place in steel tanks at a controlled temperature of 13ºC to 15ºC. After about 20 days the wine was fermented dry and was then protein- and cold- stabilised before bottling.

Seidelberg De Leuwen Jagt Sparkling White
This sparkling wine is made from 33% Colombard , 33% Chenin Blanc and 33% Sauvignon Blanc. Red apple fruit aromas on the nose with an explosion of fine bubbles with a crisp, refreshing, finish. After crushing, the grapes were pressed softly and left to settle for 24 hours. It was racked and inoculated with different yeast strains and fermented until dry in stainless steel tanks. The wine was blended, stabilised and sterile-filtered prior to bottling.

Winemaking: The grapes were picked by hand at 18,5 to 19,8°B and cooled overnight to 5° Celsius. The next day the whole bunches were pressed, the juice settled overnight and then racked to stainless steel tank for fermentation. 3% of the juice was fermented in small old French oak barrels. Wild yeast fermentation took 12 days at around 18°C. Then the wines were blended and left on the lees for between 24 and 36 months, after which it was bottled to allow second fermentation in glass. The wine stayed on the lees in glass for 12 months before it was disgorged.

Ageing: Drink immediately or over the next five years.

Krone Rosé Brut MCC is biologically stable, a true celebration of the vintner’s art. Traditional grape varieties (Pinot Noir and Chardonnay) are hand-picked in the cool of the night and in the early mornings at the beginning of the harvest season. Graham Beck Cape Classic Brut NV
Ein südafrikanischer Schaumwein, im traditionellen Champagnerverfahren hergestellt, mit schöner Hefenote, Frucht und feiner Moussierung!

Eine zarte hefeartige Note und eine schöne Fruchtigkeit zeigen sich in der Nase. Am Gaumen findet man dann eine üppige und cremige Textur. Die feine Moussierung gibt dem Schaumwein Frische und Finesse. Chardonnay lieferte Frucht und Eleganz, Pinot Noir Komplexität und Aromenlänge. Beide Trauben wurden separat vinifiziert. Sie wurden von Hand gelesen, im Ganzen abgepresst und danach vergoren. Nach der Gärung wurde der Cap Classique verschnitten und abgefüllt und verblieb 15 bis 18 Monate auf der Hefe, bevor er degorgiert wurde.

Graham Beck Cape Classique Brut Rosé NV
Frische Himbeernoten und eine feine Moussierung

Pinot Noir und Chardonnay wurden getrennt gekeltert und fermentiert, dabei wurde nur der beste Most verwendet. Die silber-rosa Farbe wurde bereits während des Transports des Pinot Noirs durch die enzymatische Reaktion extrahiert. Nach der Vergärung wurden die Weine zusammen verschnitten, schonend filtriert und in Flaschen abgefüllt, wo der Graham Beck Cape Classique Brut Rosé NV die zweite Gärung nach traditionellem Verfahren durchlief. Dieses auch für die Schaumweine der Champagne angewandte Verfahren nennt man in Südafrika Méthode Cap Classique. Der Wein verblieb ausreichende Zeit auf der Hefe, um den typischen Brioche-Charakter mit Anklängen an Beeren und Kirscharomen entwickeln zu können. Das Geschmackerlebnis wird von einem Hauch von Mineralität und einer feincremigen Moussierung auf der Zunge vervollständigt. Der Abgang des Graham Beck Cape Classique Brut Rosé ist elegant und lange anhaltend.

Feine Zitrusanklänge, feinste Perlage, cremige Textur, zarte Hefearomen

Für diesen Jahrgangs-Schaumwein wurde nur der Most der ersten Pressung verwendet. Davon wurden etwa 50 % in so genannten Pieces Champenoises (von Seguin Moreau) vergoren, in traditionellen 225-Liter-Fässern, um die üppigen Geschmacksnoten des Weines zu betonen. Der Anteil neuer Fässer beträgt in jedem Jahrgang ca. 12 %.

Nach der Vergärung wurden die besten Chardonnay-Partien miteinander vermählt und auf Flasche gefüllt, wo sie die zweite Gärung durchliefen. Die Dauer des Hefekontaktes betrug mindestens 48 Monate.

Dieser nach traditionellem Cap Classique Verfahren vergorene Graham Beck Cape Classique Blanc de Blancs zeichnet sich durch seine intensive Hefearomen und seine ausdrucksvollen Limonenanklänge aus. Am Gaumen besticht die feincremige Moussierung. Der Abgang ist elegant und lang anhaltend.

Bemerkenswert ist seine leuchtend lachsrote Farbe, der Pinot Noir-Anteil verleiht diesem Schaumwein seine reifen Erdbeernoten, während der Chardonnay-Anteil cremige Komplexität beisteuert. Am Gaumen erinnert der Cape Classique Brut Rosé an frisches Sorbet mit ausgesprochen cremiger Moussierung.
